25 Garden Fresh Summer Recipes

Fresh summer recipes celebrate the flavors of the season. For me, summer is the perfect time to indulge in healthy produce from our garden. We’ve worked so hard as a family to plant and weed this spring. Now we’re starting to savor the fruits of our labors!

In fact, like last year, I’m going to need a whole arsenal of summer recipes to use up our harvest. What we can’t eat right away, I will can as tomato jelly, green tomato relish, salsa, and squash relish to enjoy and give as gifts later in the year.

You may have a garden in the ground, or you may get all your produce from the farmer’s market or grocery store. I highly recommend growing your own tomatoes, peppers, and eggplant if you can — but no matter! Wherever you get your veggies and fruits, your taste buds will thank you for these fresh summer dishes.

All in all, I’ve gathered 25 light, easy summer recipes to share with you. These feature tomatoes, cucumbers, peppers, summer squash, eggplant. I’m also including a basil pesto recipe that I use all year long in a variety of ways.

If you need a delicious way to use up lots of garden vegetables at once, I have you covered with my traditional ratatouille recipe. A roasted vegetable medley is also a superb way to enjoy peppers and eggplant with minimal cooking.

I’ve also included summer recipes with fresh fruit — because of course, I wasn’t about to leave out dessert! You have to try Blackberry Trifle with Luscious Custard Filling and Ultimate Strawberry Shortcake. Or if it’s too hot to turn on the oven and you have ripe peaches on hand, try a refreshing no-bake peach pie.
