Bacon Wrapped Sweet Potato Bites
This new sweet potato recipe blends so many flavors that I love. Savory bacon, cinnamon and cayenne, and the sweetness of maple syrup transform this humble root vegetable into an appetizer that nobody will be able to stop eating.

We’re still eating on our last sweet potato harvest – they will last for up to a year in cool, dark place. Needless to say, I’m always dreaming up creative new ways to serve them. This savory-sweet snack is definitely a hit in our house.
Another munchable game-day snack is crispy “baked” sweet potato fries.

- 1 teaspoon kosher salt (or about 1/2 teaspoon sea salt)
- ½ teaspoon cayenne pepper
- ½ teaspoon cinnamon
- 2 large sweet potatoes, cut into 1-inch cubes
- 3 tablespoons butter

- 3 tablespoons brown sugar
- 1/3 cup maple syrup or honey for drizzling
Step-by-Step Instructions
Preheat the oven to 350 degrees F.
In a small bowl mix salt, cayenne, and cinnamon together.
In a large bowl melt 3 tablespoons of butter. Add the potatoes to the bowl and toss with the butter. Then sprinkle the cinnamon mixture over the sweet potatoes and toss until the sweet potatoes are evenly covered.
Wrap the bacon around each sweet potato cube and secure with a toothpick.
Place the bacon wrapped cubes onto a parchment paper lined sheet pan. Place the pan in the oven to roast for 45 minutes. The bacon should be crisp and the sweet potatoes tender and creamy.
Transfer to a serving platter and drizzle maple syrup or honey over the top of the sweet potatoes. Optionally, garnish with chopped green onions.
