Reviving Carrots

Reviving Carrots!  Have you ever had carrots that go limp?  Revive them completely by peeling them and leaving them in cold water in the refrigerator for about 8 hours.  The carrots will absorb the water and crisp them as if you just pulled them right out of the ground.  Gotta love that.
