Healthy Chicken Soup

This Healthy Chicken Soup recipe evokes the warm and fuzzy feeling I got every time my mom served me chicken soup. I think she was a firm believer that chicken soup had medicinal properties. Who can argue with that? It’s a time-tested, mom-approved remedy.

If you’d like a scientific opinion, you don’t have to take my mom’s word for it. Just google “chicken soup medicinal properties.” Even some dieticians agree that chicken soup can help ease cold symptoms and boost a person’s mood. A 2000 study also suggested that chicken soup can help fight the inflammation that causes stuffy noses. Plus, most chicken soup recipes include garlic and onions, which have well known health benefits.

This Healthy Chicken Soup recipe uses my signature Homemade Chicken Stock.

Cooking tips: Many cooks prefer old hens and roosters over broiler chickens for making chicken soup because of their rich flavor in the chicken broth. Chinese 5 spice, a blend of star anise, clover, fennel seed, cinnamon and Sichuan pepper, is optional in this recipe, but I personally think it adds a special touch to the dish.

Stock has higher bone content than broth, which produces a better base for sauces and soups.
