2heads iceberg lettucewashed and chopped (you can use Romaine)
2cupsmixed greens
2ripe tomatoesroughly chopped
1/2red onionthinly sliced
1/2cupgreen olivespitted and cut in half
1cupParmisiano Reggiano Cheeseshaved or shredded
1cupSimple Vinaigrette
2tablespoonsfresh parsley
1 1/2cupseasoned Sourdough Croutons
Instructions
In a large bowl, add the iceberg lettuce and mixed greens. Add the tomatoes, red onions, and green olives, and top with Parmigiano Reggiano.
Right before serving prepare the vinaigrette and pour vinaigrette evenly over the salad. Top with seasoned croutons and fresh parsley. Serve right away.
