Since 1971, slow cookers have made their way into just about every home. Slow cookers allow for unattended cooking and this has become very appealing to us in the United States.

I enjoy being in the kitchen, though sometimes I plan to do all slow cooker recipes during the week so that I can get my writing accomplished or garden tended. Many times, even when I have the time to cook traditionally, I choose my slow cooker for its steady even low heat.

Slow cookers are perfect for those meals that need to be low and slow such as recipes with cheap, tough cuts of meat. People tend to overlook these cuts, but I find the flavor these meats produce once the muscle fiber and connective tissue breaks down is much tastier than with a richer liquid.

I have noticed in recent years that slow cookers are just about used at every holiday gathering from Independence Day to Christmas. You can just about cook an entire Thanksgiving meal in them, as well, if you enough slow cookers in the house.

I was honored that one of my slow cooker recipes, Crusty Crock Pot Pork over Pumpkin Polenta, was chosen by Parade Magazine as one of the top 25 slow cooker recipes. I think it was due to the fact that  the pork had a crusty exterior while maintaining a juicy interior. Yes, this is possible. You can even make pecan pie in a slow cooker.

Yes, you can get crust even in a crock pot the is an easy recipe that is just perfect for entertaining.

A few of my favorite websites devoted solely to slow cooker recipes are Recipes that Crock and The Magical Slow Cooker. Since they are both experts, I asked them to give me a tip that most people don’t know about slow cookers.

Chris, from Recipes that Crock, let me in on a huge fact!! I love learning from my friends and experts. Chris says, “I think the thing most people are surprised to learn is that all slow cookers do not cook the same dish the same length of time. I always recommend that any time anyone tries a recipe for the first time to do it when they have time to watch the cooking time and adjust accordingly for their specific equipment. Cooking times can vary depending on size, shape, manufacturer and most importantly age. A lot of older slow cookers can cook all day and not overcook many dishes, while newer manufacturer guidelines make many new slow cookers cook a lot hotter than some recipes intend for them to and cooking time needs to be reduced.” Go figure. I love the new slow cookers, but sometimes wish I didn’t have to make all the choices that the new ones offer…just trying to keep it simple.

Sarah, from the Magical Slow Cooker, says, “One thing that many people don’t know about the slow cooker is that it is best not take the lid off at all during the cooking time. Heat and moisture escape when the lid is off. I learned this when I first started slow cooking. I was cooking roast and had opened the lid to check on it many times, and the roast ended up never getting tender.” I just loved this. I am a really big peeker and now I know that is a huge no no!!
